IN THE WORDS OF CHEF, CATERER, BBQ SAUCE CONNOISSEUR, & OWNER, DALE LOCKWOOD:
"Low and Slow" is the best way to barbecue for maximum flavor. We provide a unique service in that we are on site mobile caterers. I have always had a passion for backyard cooking, and it all began by testing out the many homemade rubs and sauces on my friends and family. Finally at the 2008 Ribs 'n' Soul Festival held annually at Hart Plaza in Detroit, my greatest achievement was reached when my recipe was voted "Best Sauce" by a panel of judges. Now I hope this unique flavor along with the unique on site mobile approach, will be the formula for a successful business.
The path to this business was a meandering one. In 1989, I completed a degree in food service from Lapeer County Vocational School, and promptly went to work within the fireplace industry. In 2004 I decided it was time to make my food dreams a reality. I invested everything I had to buy my first grill -- the "Detroit Caterer Grill" made by Quality Grills of Detroit. The grill is 14 foot long -- huge in the world of grills. I started out by participating in a few competition cooks all over the state, then moved on to catering, but had not really experienced the vending world until I participated in the Ribs 'n' Soul Festival, 2008.
I owe much to the local Chamber of Commerce. They provided great support to me as a small business owner, which gives me the drive and opportunity to give back to the community. We gained many referrals from the chamber functions we catered, which turned into catering corporate events, company picnics, family picnics, graduation parties, weddings, showers and funerals. Besides donating our services to the Chamber of Commerce, I have also donated my cookers and dry rub for use as fundraisers for the "Great Lakes Barbeque Association," "GLBBQA." I joined GLBBQA and have served on the board since its inception three year ago, where I now currently serve as Vice President. The non-profit organization is easily found on the internet at: www.glbbqa.com.
I pride myself on flavor, memorable food along with great service.
